Japan's highest grade tea, Gyokuro or "Jade Dew" is sweeter and less astringent than other green teas. This is accomplished by covering the tea fields with bamboo or mesh netting for a few weeks before harvest. Ideally, this tea is brewed at a low temperature, 160 degrees. Grown in the Yame area of Fukuoka, Kyushu, Japan.
