From South Africa comes this tea-like infusion
without the caffeine but loaded with good flavor
and healthful benefits. Smooth, slightly nutty,
and never bitter, rooibos (pronounced "roy-boss")
is delicious hot or iced (keeps in the fridge
for 2 weeks). The needle-like leaves are
oxidized (fermented) to become a reddish color,
leading to the Dutch name "rooibos" or Red Bush.
Rooibos is low in tannins, is caffeine-free, and
has natural fluoride.
