Premium Sencha is a very rich and intense
sencha from Shizuoka Prefecture in Japan. The
quality is very high, as it is picked early in the
season. The Premium Sencha is slightly less intense than
the Super Premium grade.
Sencha
should have a "harmonious of sweetness, bitterness,
richness, astringency, and fragrance." To ensure
this flavor you must steep the tea in a lower
temperature of 160-180 degrees for 1 to 2 minutes. Japan Sencha has a great lingering aftertaste. The second
infusion (1-2 min.) is also delicious.
